Absolutely adore the yellowfin tuna with olive oil. I can eat it straight without adding any extras, it also is extremely healthy! I never knew I could LOVE tuna, especially without mayo!

  • 2 tablespoons olive oil
  • 2 (5 ounce) cans Genova Tuna in Olive Oil
  • 1 Japanese eggplant, cut in half lengthwise and sliced
  • 1 red bell pepper, finely diced
  • 1 bunch kale, stems removed and chopped
  • 1/2 cup water
  • 4 cups cooked brown rice, hot
  • Juice from 1 lemon, optional


  1. Place olive oil in a large sauté pan over medium high heat. Drain tuna and add to oil in sauté pan. Add eggplant and cook, turning occasionally until browned, about 6 minutes.
  2. Add bell pepper, kale and water. Lower heat, cover and cook until kale has just wilted, about 4 minutes. Season with salt and pepper.
  3. To serve, place kale mixture over rice and top with tuna. Drizzle a little lemon juice over the top for a bit of extra zing.
