Absolutely adore the yellowfin tuna with olive oil. I can eat it straight without adding any extras, it also is extremely healthy! I never knew I could LOVE tuna, especially without mayo!

Ingredients

  • 2 (5 ounce) cans Genova Tuna in Olive Oil
  • 1/4 cup low fat Greek yogurt
  • 1/4 cup red onion, diced
  • 1 small Pippin or Granny Smith apple, cored and diced
  • 1/4 cup pecans, chopped
  • 1/4 cup celery, diced
  • 1 tablespoon fresh dill, chopped
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon fresh ground black pepper
  • 8 slices bread
  • 4 leaves green leaf lettuce

Directions

  1. Place tuna (and the oil it’s packed in) in a medium bowl. Add yogurt, onion, apple, pecans, celery, dill, salt and pepper, stirring to combine. Refrigerate in an airtight container until ready to use or up to 2 days.
  2. Place tuna and lettuce between bread slices and serve.
